Yogurt marinated lamb leg w/olives and grilled pita

Everybody loves the taste of that sweet lamb in the spring time and this is the best way to cook lamb on the bbq without slaving away in a stinking hot kitchen for 3 hours, plus you get  the best result and in half the time and it tastes absolutely sensational.

Ingredients

 

·       1 leg of lamb boned and butterfly

·       1cup of yogurt plain

·       Rosemary

·       Garlic cloves

·       1 lemon juice

·       200gr mixed olives

·       Mint

·       10 pita bread

·       Fetta

Method

Place lamb into plastic bag add yogurt, rosemary, lemon juice, garlic, marinate 6 hours .Turn bbq on to high heat  place lamb skin side down get some good colour on it cook about 8-10 min and turn cook for 8-10 min take off rest  for about 10-15 min the longer the better turn bbq down to low heat and add olives to the  grill for 5 min place into bowl toss with fetta and mint grill pita slice lamb serve in pita [like a lamb sambo] I bet it will be the best sambo  ever and your mates will love you

 

 

Bbq mushroom & beer onion sausage rolls

This is made with the most underrated but hands down  the most used ingredient in the world that’s right I’m talking about the humble day old BANGA [sausage]

Ingredients

 

·       10 day old cooked banges

·       Cup of chopped beer onions

·       Cup of chopped cooked mushrooms

·       3 eggs

·       2 tbls of dried Italian herbs

·       s/p

·       2 sheets puff pastry

Method

Slice snags supper thin add to bowl add chopped mushrooms, beer onions , herbs,  s/p and mix realy well use hand you know you want to .

Place puff pastry on to board no carefully spoon snag mix on to sheet at one end now roll up like a big sausage crimp both ends and repeat process turn bbq on to med heat place sausage rolls on to baking paper and on to a cake rack brush with left over egg mix cook for 15 min to pastry is golden brown remember the stuffing is all ready cooked to serve slice up thick add a splash of big red and crack a cold VB stubby trust me your next trip to the local bakery will never be the same

The best sausage pasta salad u will ever eat [pork sausage preferred]

Day old sausage pasta salad w/ricotta & olives 

·       10 cooked day old snags

·       200gr ricotta

·       200gr mixed olives

·       150gr shaved parmesan cheese

·       Italian parsley

·       1 punnet   cheery tomatoes

·       Any cooked cooled pasta

·       Lemon juice

Method

Slice up sausages nice and thin on a bit of an angle, add to cooked pasta now add crumbled ricotta add parmy mix in the olive , cheery toms , season with lemon juice s/p to taste it’s so good toss well add a bit of olive oil if you need to loosen it up?

To serve place piled up in nice serving bowl and a bit of crunchy bread goes great.

You know the first time I made this salad I took it around to my girlfriends parents house they said it was one of the best salads they had ever eaten... little did they know the main ingredient in it was the snags they had bought to my bbq the day before that didn't get eaten. 10 points to me and 10 bucks in my pocket. Have a go - you will love it
