BBQ breaky- brunchy -bomb
This has to be our all time favourite bbq quickie, Whether it’s a sex in the city party [girls]
Or a big nite on the beers watching the footy [boys] waking up with a bit of a hangover this has to be the one it’s so simple but so dam tasty !!!!!!!!!!!!!!
Ingredients
1* tank loaf UN cut
1*tin of champion mushrooms
200gr mozzarella grated
½ bunch green shallots
6 eggs beaten
200gr sliced ham
100ml cream
S/p *butter
Method serves 6
In a bowl mix eggs, cream, cheese, sliced mushrooms, shallots, and ham season well [should be thick]
Slice tank loaf 1-2 inches thick use mushroom can to cut a hole in middle of bread , butter one side place butter side down on to medium BBQ , carefully spoon mix in to hole fill to the top of bread evenly cook for 2-3 min ( little colour is cool) flip and cook for 2 min will be nice and crusty cheese should be gooey and then you are ready to serve. No plates needed... you ripper!

BBQ PRAWN & AVACADO WRAPS [serves 10]
This is a great lunch thing to do on the bbq when you got a few people over having a cold beer or a nice glass of wine around the pool, It’s so easy to do and so, so beautiful to eat let’s get in to it
Ingredients
1kg green prawns
1 pack of Lebanese bread
1 ice berg lettuce
1 bunch of coriander
200gr snow peas
1 red capsicum
200gr bean sprouts
3 sliced large red chillies
2 avocados
Olive oil s/p
1 red onion
Method:
Prepare green prawns by taking of heads and butter flying from the back down ,set aside,
Slice all other ingredients up in to separate bowls [just like in the window of your local kebab shop
This makes it easy when making up the wraps it’s all about being set up and ready to go
Season up the prawns and add olive oil, BBQ on high heat shell side down for 2-3 min turn once cook for 1-2 min take off squeeze lemon juice on to meat set aside. Place bread on board now build all ingredients one by one add prawns season up and roll up wraps place back on hot plate with some sort of weight on it crisp up 1-2 min serve immediately so yummy

BBQ SEAFOOD CASSEROLE [serves 6-8]
This is one of those BBQ dishes that you pull out when you want to impress the pants off someone. It is super sexy and your guests will be talking about you for days [this time good stuff]. Have a try, you will fall in love with it - I did!!!!!!!!!!!!!!!!!!!!!!!!!!!.
Ingredients:
½ kilo of black mussels
2 squid tubes [sliced]
1kg green prawns
300gr snapper[white fish]
1 brown onion[sliced]
1 fennel bulb sliced
4 large red chillies
4 garlic cloves sliced
3 Roma tomato’s diced
200ml white wine
2 tins crushed tomato’s
Parsly leaves
Olive oil
Method:
The best way to do this one is to spend 25 min preparing all ingredients on to a plater in their own little piles all sliced and ready to go .Turn BBQ on to high heat remember were using the BBQ like an oven place a casserole dish of some sort on the hot plate add olive oil ,onions ,garlic, fennel ,chillies And sweet for 3-5 min now add white wine cook 1-2 min add mussels,squid,prawns,tomatos , add caned tommies stir well season and cover to cook for 20 minutes. Keep an eye on it and when everything else looks ready, add fish and cook for a further 5 min. Add parsley, lemon juice to serve place on table dig in great with some grilled sourdough bread, cold beer or a glass of wine enjoy!
