BBQ Smoked salmon Brekky Pizza
The perfect way to start the weekend, also goes good with a cold corona “maybe not for brekky...He he”
INGREDIENTS: Serves 4 pax
Pre cooked pizza base
1 avocado
250g spinach
6 basil leaves
150g ricotta cheese
150g boconchini
250g smoked salmon
1 lemon, zest & wedges
EVO, S&P
• Once you have made this pizza on the BBQ trust me pizza will never be the same again!
METHOD:
Place pizza base o board, spoon avo and spread onto base(this will be the sauce)
Roughly place spinach round pizza, season as you go
Put a layer of ricotta on top, season
Zest the lemon onto the cheese, place rosettes of smoked salmon on pizza
Finish with boconchini, in little balls of love, season well, brush with EVO
Bake in medium BBQ for 10-15 mins

FINGER LICKIN BBQ CHICKEN WITH DIPPY CHEESY BREAD
The best BBQ chicken in the world and a cheap way to feed 6 people
INGREDIENTS: (serves 4-6 pax)
1 whole Chook cut into 9 pieces(size14) (see website RE: how to cut a chicken)
1 TSP cumin
1 TSP cayenne pepper
1 TSP Cajun spice
1 TSP Dried chilli
1 TSP paprika
1 TSP Tumeric
1 TSP Corriander (root)
2 Whole red chillis
3 shallots (baby onions)
1 lemon (juice)
EVO,
1 French Stick
1 uneaten dip – you decide which one they all work!
METHOD:
Place chicken pieces onto tray
In mortle & pestle place ingredients, smash to bits until a smooth paste forms
Add lemon juice & EVO to make a wet consistency
Pour onto chicken pieces, marinate for 2-3 hours
To make bread, slice stick 2 inches thick (make sure not to cut all the way through), set aside
To make filling, add left over dip mixed with half a cup of mozzarella cheese, season, spoon into bread gaps, wrap in foil, now its time to BQ
Cook chook skin side down for 10-15 mins, place bread on rack for 4-5 mins
Serve with lemon wedge, you will be king of the castle!
