Shredded Chicken & Sweet Tomato Bread Salad
A great easy salad to make on a spur of the moment with the day old bbq chicken and day old bread.
INGREDIENTS: (serves 6-10pax)
1 BBQ Chook (size10)
1 punnet yellow cherry tomatoes
1 punnet red cherry tomatoes
200g semi-dried tomatoes
Half bunch basil leaves
One Spanish onion
200g black olives (kalamata)
1 lemon
Olive oil/balsamic
1 sour dough tank loaf (day old preferred)
METHOD:
The best way to make this salad is to prep everything first. Toss ingredients together to serve. Cut all tomatoes in half, set aside, pick basil leaves, set aside. Dice bread into medium size cubes, shred chook of bone (remember brown meat is best – full of flavour!). now we are ready to go. In a large bowl toss all ingredients with EVO and balsamic, lemon salt and pepper. Serves 6-10

BBQ ROASTED BEEF FILLET WITH HORSE RADISH AND PARMESAN CRUST
The perfect wow factor for your next BBQ, this one will knock the socks off any guest, don’t be scared give it a go!
INGREDIENTS: (serves 10-15pax)
1 Beef fillet whole (2kg)(approx $30-35kg)
Half cup finely grated good quality parmesan cheese (regiano)
2 TBSP horseradish cream
Half bunch chives
Olive oil,
1 lemon
Sat & pepper
Sliced bread to serve
METHOD:
Heat BBBQ on high for 10 mins
Get it nice and hot, season beef fillet really well on all sides
Dress with olive oil, place on hot plate, look out for that sizzle!
Cook for 4 mins on all 4 sides, take off and rest for 12 min (very important)
Zest lemon a tray, mix with S &P, Brush beef fillet with horse radish, slice thinly, grate parmesan over top
Season with lemon juice, EVO and serve on grilled bread
